Pancakes
Pancakes, also known as hotcakes or flapjacks, is a flat round cake cooked on a griddle or frying pan. It is an easy breakfast which is loved by everyone. The quest for most pancake lovers are pancakes which are light and fluffy. This recipe gives you these, and a lot more. This should be your go-to recipe for your morning pancakes.
INGREDIENTS
(1) 130 Grams All Purpose Flour (1 Cup)
(2) 25 Grams Granulated White Sugar (2 Tablespoons)
(3) 1-1/2 Teaspoon Baking Powder
(4) 1/2 Teaspoon Baking Soda
(5) 1/4 Teaspoon Salt
(6) 1 Cup Milk
(7) 28 Grams Unsalted Butter (Melted) (2 Tablespoons)
(8) 1 Tablespoon White Vinegar
(9) 1 Large Egg
(10) 1/2 Teaspoon Pure Vanilla Extract (Optional)
PROCEDURE:
(1) Mix Vinegar with milk and allow to stand for 10 minutes to make sour milk.
(2) Combine dry ingredients in a mixing bowl. You can add more sugar if you want sweeter pancakes.
(3) In another mixing bowl, combine all the wet ingredients except the butter. The butter will solidify if it comes in contact with the cold milk.
(4) Create a well in the middle of the dry ingredients and pour in wet ingredients. Mix to combine. Add melted butter and mix to incorporate. Do not over mix. Remember, with pancake, lumps are good.
(5) Heat a non stick frying pan or griddle. Grease lightly with a non stick cooking spray or butter. When the pan is hot, reduce the heat to medium and pour your batter on the pan in about 1/3 cup measurements. You will not need to grease your pan after the first couple of pancakes. Everyone knows that the first pancake never turn out perfect. That’s for the cook to eat. But as you proceed the pancakes will get better. Always keep the heat on medium or medium low.
(6) Fry the pancakes on one side for about 3 minutes or until you notice air bubbles on the top of the pancake and the top no longer has a wet look. Flip the pancake and fry the other side for about 1 minute. Take off heat and start staking your pancakes as you fry.
Drizzle maple syrup, honey or other syrups over pancakes and serve. I love having mine with Pineapple Syrup, some sliced bananas and some walnuts or pecans.

I have noticed different types of vinegar on sale, I think there is the clear and red one, not sure now, which of these two do we use. Can you also kindly educate me on the use of vinegar, I know it is also used to clean meat. Is it multipurpose?
I used ordinary white vinegar sometimes referred to as distilled vinegar. The label should say. There are various types of vinegar: white, white wine, red wine, rice, balsamic, apple cider, et cetera. They all have various uses.
Pls can i used peak evaporated milk in making the pancake?
I have never tried it before. If it will be possible, you will have to water down the milk so it is thin.
I tried this pancake today and it was so good. Even though I used self-raising flour, I still added a quater of both baking soda and baking powder. Then, I also used apple-cider vinegar instead of white vinegar. My toddler loved it… thanks

Use buttermilk in place of milk. Lemon juice should also work.
