Raspberry Jelly
This is a jelly made out of raspberries thickened with gelatin. It can be used as glaze for desserts like raspberry cheesecakes (recipe here) or as an integral part of a dessert like raspberry panna cotta parfaits (recipe here) and raspberry tartlets (recipe here). The flavor is rich and intense as it is made with real raspberries. It adds a bit of tang to desserts and is a sure way of increasing the flavor profile of an otherwise bland dessert.
INGREDIENTS:
(1) 400 Grams Frozen Raspberries
(2) 75 Grams Granulated White Sugar (1/4 Cup + 2 Tablespoons)
(3) 1/4 Cup Water
(4) 2 Teaspoons Unflavored Gelatin
NOTE:
You can reduce of increase the amount of sugar depending on how sweet the raspberries are or to your taste.
PROCEDURE:
(1) Place a pot of water on fire and bring it to a boil. This will be used as a bain marie.
(2) Place the frozen raspberries and sugar in a heat proof bowl and place it over the pot of water. Cover the bowl with the pot cover (or any cover). As the water boils, it will melt the raspberries. Leave it this way until most of the raspberries have melted. This could take about 20 – 30 minutes.
(3) While the raspberries are melting, mix the gelatin with the cold water and leave it to form a thick sponge.
(4) When the raspberries have melted, pass the mixture through a sieve to remove the seeds.
(5) Add the soaked gelatin to the raspberries and mix the two together. Return the mixture to the pot and heat it a bit if you can still notice gelatin granules.
(6) Leave the mixture to cool down a bit and spoon it over your dessert. Place the dessert in the fridge for about an hour for the gelatin to firm up.

I would say no. You can however mix it in your buttercream to make raspberry buttercream.
