Pan Seared Swordfish with Herby Butter Sauce
Eating healthy does not have to be boring. This is a beautiful and easy to make swordfish dish which is sure to please anyone. The swordfish is seasoned and seared in a hot pan and later topped with a butter sauce packed with herbs and peppercorns. It is a light dish full of flavors.
INGREDIENTS:
(1) 1 Swordfish Steak
(2) 1 Tablespoon Olive Oil
(3) 2 Tablespoons Butter
(4) 2 Teaspoons Fresh Peppercorns
(5) 2 Cloves of Garlic
(6) A Small Handful of Fresh Parsley
(7) Salt and Pepper to Taste
PROCEDURE:
(1) Wash and pat your swordfish steak dry.
(2) Heat the olive oil in the pan until it is very hot.
(3) Season one side of the steak with salt and pepper and place the steak in the hot pan, seasoned side down. Season the other side.
(4) Cook the steak for about 3 minutes per side, depending on size of steak. Do not overcook it or it would become chewy.
(5) While the steak is cooking, place the peppercorns, garlic and parsley in a mortar and crush them together into a paste.
(6) When the steak is cooked, remove it from the pan and place it in your serving plate. With the pan still on fire, melt the butter.
(7) Add the herb and spice paste to the butter to infuse it with their flavor. Season with salt and pepper and scrape off the brown bits at the bottom of the pan.
(8) Pour the infused butter over the steak and serve hot.

A side of salad, some cous cous, orzo pasta salad, a stir fry, the options are plenty.
