Plantain Coconut Fritters

 

 

 

 

 

 

 

This is a lovely sweet snack which can be enjoyed alone or with some pudding or tea. Infused with tropical flavors, these treats are easy to make. The coconut gives them a crunchy texture while the egg and milk make them light and fluffy. This is something the whole family will enjoy making and eating.

INGREDIENTS:

(1) 225 Grams of Very Ripe Plantains (1 Large Plantain)

(2) 65 Grams All Purpose Flour (1/2 Cup)

(3) 50 Grams Dried Sweetened Shredded or Flaked Coconut (1/2 Cup)

(4) 1/4 Teaspoon Baking Powder

(5) 1/8 Teaspoon Salt (A Pinch)

(6) 25 Grams Granulated White Sugar (2 Tablespoons)

(7) 2 Tablespoons Milk

(8) 1 Large Egg (Separated)

(9) Oil for Frying

PROCEDURE:

(1) Peel and Mash Plantain.

(2) In a large mixing bowl, mix the mashed plantain with all the dry ingredients till blended.

(3) Mix egg yolk and milk together and add to plantain mixture.

Beat

 

 

 

 

 

 

 

(4) Beat egg white to medium peak and gently fold it into the batter with a spatula.

(5) Heat oil till hot and reduce heat to medium. Use ice cream scoop or two spoons to scoop batter and fry fritters in hot oil. Fry in batches for about 5 minutes each. Turn the fritters after about 2 minutes of frying to ensure that they brown evenly.

Serve warm. Try these fritters out with my Fonio (Acha) Pudding. Enjoy!
