Herbs and Sesame Seeds Rolled Quail Eggs
Planning a party? These perfect one bite quail eggs will make a perfect hors d’œuvre. This is a modified french recipe which shows off different types of herbs. It is a great way to experience the fresh taste of the herbs you love. The toasted sesame seeds add some texture to the quail eggs and the chili adds some kick. The only turn down to these is that you might have to make tonnes of them because it is almost impossible for anyone to have just one.
INGREDIENTS:
(1) 1 Dozen Quail Eggs
(2) 3 Heap Tablespoons Fresh Herbs (Rosemary, Thyme., Chives, parsley, et cetera)
(3) 1 Teaspoon Olive Oil
(4) 2 Teaspoons Sesame Seeds
(5) 1/4 Scotch Bonnet (optional)
(6) Fleur de Sel
(7) Pepper to Taste
PROCEDURE:
(1) Place quail eggs in a pot of water and bring to boil. As soon as it starts boiling, cover pot and allow the eggs to sit in the hot water for 4 minutes.
(2) Drain hot water and shock eggs in very cold water. Leave eggs to cool down completely. You can use an ice bath to hasten process.
(3) Peel the eggs. The shells will come off easily.
(4) Meanwhile, mince your herbs and scotch bonnet finely.
(5) Toast sesame seeds for better flavor and add to minced herbs. Season mixture with fleur de sel and pepper.
(6) Place eggs in a small dish and drizzle olive oil over eggs. Turn to coat eggs evenly with oil.
(7) Place herb mixture in a bowl and roll eggs in herbs to coat.
Serve coated quail eggs on a platter and watch them disappear.

Fleur de Sel is a finishing salt. Any salt would do. The “stuff” beside it is a herb called Chives. Yes, it is edible but I used it mainly for garnish here. Do try it out.
