So, your bread has risen beautifully and its time to shape it for its second rise. This is how its done. This method is called the “fold and tuck” method.

PROCEDURE:

(1) Empty risen dough on work counter and deflate using your fingers. You don’t have to knead dough again, just deflate it lightly.

(2) Starting from the side farthest to you, fold i/3 of the dough towards you and tuck into remaining dough using fingers.

(3) Repeat step 2 again.

(4) Fold in the two edges of dough to seal sides of dough.

(5) Do the final fold and turn dough upside down to reveal seam.

(6) Press seam together to seal loaf.

(7) Turn loaf right side up to reveal perfect loaf shape.

(8) Place in pan and cover for second proof. That’s how it is done.

If you want to make a free form loaf that calls for braiding, below is a simple braiding technique which can be used in my Golden Crust Bread and other bread recipes.

(1) Flatten risen dough and transfer to parchment paper.

(2) Using a bench scraper or a sharp knife, make diagonal slashes on both sides of dough.

(3) Begin folding dough in alternating between sides.

(4) Tuck in dough at the end, cover and allow to rise for the second time.
