Pesto Pasta

This is a very easy pasta dish which takes about 15 minutes to prepare. It consists of pasta coated in a lovely pesto sauce. In this case, I  used sun-dried tomato pesto. You can however use whatever type of pesto you choose. For better results, use homemade pesto as this will yield a fresher tasting pasta dish.

INGREDIENTS:

(1) 200 Grams Pasta (See Note 1)

(2) Pesto Sauce (See Note 2)

(3) Salt and Pepper to Taste

(4) Extra Virgin Olive oil to Finish

NOTES:

(1) You can use whatever type of pasta you love. In this recipe, I have used durum wheat Strozzapreti Pasta which is an elongated form of cavatelli pasta which has been hand rolled. The cooking duration will depend on the type of pasta you use.

PROCEDURE:

(1) Boil your pasta. You can read more about how to cook pasta properly here.

(2) Drain the pasta water from the pasta reserving about 1/2 a cup of it. Place the pasta in a bowl, add as much pesto as you want and mix to coat the pasta with the pesto sauce. If you feel the pesto is too concentrated, you can add a little bit of the pasta water to lighten it up. Season with salt and pepper if needed and finish with a drizzle of olive oil.

BONUS RECIPE:

(1) You should try out this pesto with seafood like shrimps, fish and frog legs. You can use this recipe for frog legs.
