How to Make Mirepoix/Soffritto

Mirepoix is a French term which is used to describe a mixture of chopped celery, carrots and onions. These three ingredients are commonly referred to as aromatics. They can be sauteed or roasted in butter or oil and used as a base for soups, stews and other dishes. Together, they impact a lot of flavor to dishes and turn even the most basic meals into fantastic creations. There are many variations of this aromatic blends in different parts of the world which include soffritto (Italy), Sofrito (Spain) and “Holy Trinity” in Creole and Cajun cooking.

Mirepoix is not to be mistaken for Pestata which is a blend of the same aromatic vegetables which is processed to form a paste.

PROCEDURE

(1) Simply chop all three aromatics finely with a sharp knife. A veggie chopped can also be used. If using a food processor, be careful not to over process the aromatics.

(2) Mix all three ingredients together and use them as a base for your next savory creation.
