How to Make Marzipan

Marzipan is a confection consisting primarily of almond flour and and icing sugar. It can be made into sweets and imitation fruits and vegetables. It can also be used to cover fruitcakes. In this tutorial, I will be showing you how easy it is to make marzipan at home.

INGREDIENTS:

(1) 250 Grams of Almond Flour (Sifted) (See Note 1)

(2) 250 Grams of Icing Sugar

(3) 1 Large Egg White (About 40 Grams)

(4) 1/2 Teaspoon Pure Almond Extract (Optional)

NOTES:

(1) For a smooth marzipan paste, sift your almond flour. You can learn how to make almond flour here.

PROCEDURE:

(1) Place the sifted almond flour and icing sugar in the bowl of your food processor and process for a few seconds to blend the two ingredients together.

(2) Add the egg white and almond extract and process until the mixture starts to clump together.

(3) Turn the mixture onto your work surface and knead to form the marzipan. If the mixture is too dry, add some more egg whites. If it is too soft, add some more almond flour.

(4) Wrap marzipan with cling film to form a smooth block.

(5) Marzipan should be stored properly wrapped in the fridge. To use marzipan, remove from fridge and allow it to come to room temperature. Knead marzipan until it is soft.

    This may be a silly question, but when you say “icing sugar” do you mean confectioners or powdered sugar? Or a very fine granulated white sugar?
