How to Make Almond Flour

Almond flour, as the name implies, is flour made from almonds. It is a key ingredient in some cakes like fruitcakes and is used to make marzipan and macaroons. In this post I will show you how to make almond flour.

INGREDIENTS:

(1) Blanched Almonds (See Note 1)

(2) A Tablespoon of All Purpose Flour (See Note 2)

NOTES:

(1) You can buy blanched almonds in the store or learn how to blanch your own almonds here.

(2) The purpose of the all purpose flour is to keep the almonds from clumping together while being processed. Almonds have a lot of oil and will easily cake together when processed.

PROCEDURE:

(1) Place the blanched almonds in a food processor along with the tablespoon of AP flour.

Note: This can also be done in smaller batches with a nut mill or coffee grinder.

(2) Process until it breaks down to form flour. You might need to stop the food processor once in a while and use a spatula to scrape the edges of the bowl in order to break clumped up almonds.

(3) You will notice that almond flour is not as smooth as all purpose flour. If you are using the flour for a cake, it can be used this way. If however you want to use it for macaroons or marzipan, you will need to sieve the flour.

(4) Store unused flour in an airtight container.

    Did you feel like it made a fine enough flour? I’ve made a few things with almond flour that wasn’t finely ground and it was delicious but a little grainy and greasy. Like it didn’t absorb all the coconut oil because it was too coarse. Even trying to sift it didn’t help. I’m looking for an easy way to make my own finely ground almond flour. I have been reading that grain mills can’t get it fine enough and sometimes the blenders can’t either. Did you try it in a blender as well? Or just the food processor? Maybe the trick is adding the regular flour. Thanks!!!

      Hi Emily, like the recipe says, regular all purpose flour should be added to the nuts before blending. This will cut through the greasiness and give you a finer product which must be sieved. A food processor will work better than a blender. Grain mills might clog things up.
