Ruffled Wedding Cake
There is something about wedding cakes that scare me. It always looks like a great responsibility having to make someone’s wedding cake. I was a bit sceptical when I was asked to make this cake. I had earlier made the bridal shower cake for the same lady and she wanted me to also make the wedding cake. She wanted anything (pressure) so long as it had gold and emerald green. Trust Terry to settle for a complicated design. I ended up making a 3 tiered cake with a quaint Victorian feel to it.
The sponges of this cake are French Vanilla frosted with vanilla buttercream. The entire designs on the cake were made with marshmallow fondant. I wonder why a lot of bakers look down on marshmallow fondant. It is so easy to make and you can achieve any design you want to achieve with it.
The bottom tier is an 11 inch round covered with flower ruffles.This was my first time making these ruffles and I must confess that at a point I thought I had bitten more than I could chew. It took hours to make and after a few anxiety attacks, I was home and dry. The finished product was such a delight to behold. I decided to paint the tips of the flower ruffles with gold pearl dust.
The middle tier is a 9 inch round and contains the wedding colors in the form of a gold ribbon and an emerald green pearl stone.
The top tier is a 7 inch round and has some ruffles. It is also topped with a couple of white hibiscus flowers and the personalized topper of the couple.
I learnt a lot while making this cake. It improved my confidence in making wedding cakes and now I can’t wait for my next wedding cake as there are some other designs I am longing to try out.
