Peach Nectar
Peach nectar is a thick juice made out of peach fruits. It is a key ingredient in certain baked goods and can be used in place of syrup on pancakes or ice cream. It can also be added to smoothies or drank as it is. I used this peach nectar in making my Southern Fruitcake which can be found here. It is very easy to make and the same method can be used to make nectar from other fleshy fruits.
INGREDIENTS:
(1) Peaches
(2) Water
(3) 1 Tablespoon Lemon Juice
PROCEDURE:
(1) Fill a large pot with water and bring to boil. As soon as the water starts boiling, place the peaches inside the boiling water and allow to cook for about 10 minutes. This will loosen the skin of the peaches.
(2) After 10 minutes, take the peaches out of the hot water and place them in cold water to halt the cooking process.
(3) Peel the peaches, remove the stone in the middle and cut them into manageable chunks.
(4) Place peach in a blender with some water. The ratio of peach to water should be 2:1 (2 parts peach flesh to 1 part water). Squeeze some lemon juice into the mix. The lemon juice will brighten up the flavor of the peach. Blend everything to a smooth puree.
TIP: Measure the peach flesh in cups after coring and chopping. This will help you estimate how much water you will need. Note that the ratio does not refer to the number of peach fruits you use but the quantity of flesh you have after coring and chopping.
(5) After blending the peach, strain it to remove large unprocessed chunks of fruits that might not have blended.
Your peach nectar is now ready to be used. Store leftovers in a sealed jar or bottle in the fridge.
Please Terry, can any other fruit like an apple be used in place of the peaches as am in Nigeria(imo). Peaches ain’t easy to come by. Thanks
