Straw Hat Cake
A friend of mine was organizing an afternoon tea for a few of her friends. The theme of the tea was Downton Abbey and she wanted a cake around that theme. I came up with this Victorian straw hat cake which I felt tied nicely to the theme. She and all her guests were blown away by it. This cake would rank among my top 5 cakes.
The cake itself is a red velvet cake with cream cheese frosting. The designs on the hat were made with Marshmallow Fondant.
The most impressive thing about this cake is the straw detailing on the crown and brim of the hat which was made by wrapping the cake with thin strips of fondant. It was a lot of work, but it paid off as the finished cake was quite impressive.
Around the hat is a red ribbon made out of fondant which ends in a flat loop bow in the front of the hat.
In the center of the loop bow is a bright red brooch surrounded by white sugar pearls.
I was later told that a lot of people felt it was a real hat. That’s the greatest compliment.
My husband and siblings still can’t believe that this is a cake. It is a classic. One of my best so far. God bless your hands Terry. You are really gifted.

This is a beautiful cake! I love it and your work is immaculate. What are the dimensions and do you mind sharing how you made the entire cake, especially the brim?
Thanks. Unfortunately I do not have a tutorial for this cake. As for the dimensions, the crown was baked in a 9 inch glass bowl. I cannot remember the dimensions for the brim. The cake body of the hat and the brim were made by wrapping 1 cm fondant strips (the middle of which were marked with a stitching tool) around the entire cake. I hope this helps.

It would keep about a week in the fridge. I won’t leave a cake frosted with cream cheese outside the fridge.
