Homemade Butter
Butter must be the most common spread in the world. People of all ages love this creamy spread which adds a lot of flavor to baked goods and cooked meals. Did you know that you can make your own butter at home? I learnt how to do this one day as I was contemplating on what to do with some leftover whipping cream I had. I did some research online and that began my journey into the world of homemade butter. There are many pluses to making your own butter: (1) It does taste really good; (2) You are sure your butter is 100% pure without the additives of processed foods; (3) You can use up leftover whipping cream thus preventing waste; (4) You end up with buttermilk in addition to butter. Need I say more? Let’s churn some butter!
INGREDIENTS:
(1) Cold Whipping Cream (Cream with fat content of at least 33%)
PROCEDURE:
(1) Place cold whipping cream in stand mixer fitted with the whisk attachment and whisk at medium-high speed. The whole process will take about 10 minutes during which time the butter passes through many stages:
(a) Whipped Cream Stage. At this stage the cream will be whipped to stiff peak. Stop mixer at this point if you want to make whipped cream frosting. Sugar can also be added at the beginning of the process if your intention is to make whipped cream frosting and not butter.
(b) Separation Stage: At this stage the butter solids will separate from the buttermilk. The separation starts slowly at first and quickly escalates. So you have to pay close attention when you start noticing any form of separation.
(2) Gather the butter solids together and drain the buttermilk. The buttermilk can be used for recipes which call for buttermilk which include biscuits, chocolate cakes, bread, et cetera.
(3) Under cold water, wash the butter. Don’t worry, it wont melt. Make sure you wash it till the water run clear. Butter that is not properly washed well has short shelf life. You can add salt after washing if what you want is salted butter. You can also get creative and add herbs to make your own compound butter.
PS: A food processor can also be used for this process. Just fit with whipping attachment or dough blade and process till butter solids separate from buttermilk.

Yeah God bless terry..@Opeyemi u can get whipping cream from any spar,park and shop,shoprite outlet in Lagos.at least I know the Spar in Lekki has a full shelf of whipping cream.

I washed under running water. You can also wash in bowl of water. Keep rinsing till the water is clear.

Thanks. Run it under cold water and knead as though you are kneading dough. Its easy and you will get the hang of it as soon as you start. The butter will not melt but will stay together as a single piece. Have fun trying it out.

terry oh terry.you are blessed beyound measures.please. im not sure where i can find whipped cream in stores where i am(makurdi). but this sounds to me like fulani kindurmu(not nunu).dats the one that has losts of fat in it. can do. do you think so.i want to bake rvc using ur recipe and it calls for buttermilk which im not familiar with. thanks alot.
Hi. I am not sure if kindurmu would be the same thing. But yeah, it does have a high fat content. If you don’t hv buttermilk, just add a tablespoon of whie vinegar to a cup and top it up with milk. Allow stand for ten minutes. This would produce sour milk which is a good substitute.

Oh ok. Whipping cream is the only ingredient you need. I’m not sure if the Fulanis in Nigeria extract cream from their milk. You should however be able to find whipping cream in stores like Shoprite.

Same as regular butter or buttermilk. I’d say store in fridge. Buttermilk can be frozen.
