Seafood Fried Rice

This is an absolutely delightful fried rice recipe loaded with various seafood and vegetables. This recipe takes the traditional fried rice recipe a step further by adding a variety of seafood to it. With this rice dish, you will be able to take advantage of  the taste and freshness which is usually associated with seafood dishes. The beauty of this dish is that you can individualize it by using your own choice of vegetables and seafood.

INGREDIENTS:

(1) 2 Cups Long Grain Parboiled Rice

(2) 2 Tablespoons Canola Oil (You can also use Peanut, Corn, Sunflower or Vegetable Oil)

(3) 1 Teaspoon Grated Ginger

(4) 2 Garlic Cloves (Grated)

(5) Chicken Broth

(6) 2 Bay Leaves

(7) A Sprig of Thyme

(8) Bouillon Cube (Stock Cube)

(9) Vegetables (Carrots, Green Beans, Peas, Scallions, et cetera)

(10) 1 Medium Onion

(11) Seafood (Mussels, Shrimps, Prawns, Calamari, et cetera)

(12) Salt and Pepper to taste

Note: Though your choice of vegetables are open, they should include Carrots and Green Beans.

PROCEDURE:

(1) Wash and boil rice for 10 minutes. Remove from heat and wash rice. The purpose of this initial boiling is to get rid of some starch which usually makes the rice stick together.

(2) Place washed rice in pot and cover with chicken broth. The broth should be at the same level with the rice. Add the bay leaves and thyme to the rice and cook for 10 minutes.

(3) While the rice is boiling, remove the veins from the green beans and dice.

(4) After the rice has cooked for 10 minutes, add the green beans to it and cook for another 5 minutes. Total cooking time for rice is 25 minutes. The rice should not be very soft. It should be somewhat al dente.

(5) While rice is cooking, prep vegetables by cutting them into small bits. Separate the green onions (scallions) and regular onions from the rest of the vegetables. Also grate the ginger and garlic together.

(6) Prepare the seafood too. Clean mussels, remove veins and shells from shrimps and prawns, clean calamari, et cetera.

(7) When the rice is ready, take out the bay leaves and thyme and set aside.

(8) In a large pot or wok, heat the oil. When hot, add the chopped onions and saute until soft, about 2 minutes.

(8) Add the grated ginger and garlic and cook for 1 minute.

(9) Add all the other chopped vegetables, stock cube and seafood mix to wok. Toss to coat. Cover the wok with a lid and allow to cook for 10 minutes.

(10) After 10 minutes, the seafood should be cooked. You will also notice a lot of liquid at the bottom of the wok. Take wok off heat and drain this liquid into a smaller sauce pan. Boil this liquid until it reduces and intensifies.

Note: This liquid contains most of the flavor of this dish. If you keep cooking it along with the other ingredients, the seafood and vegetables will be overcooked. If you pour it away, you will be doing away with a lot if useful flavors.

(11) When the liquid has reduced sufficiently, add it back to the wok, return wok to fire and add boiled rice.

(12) Toss all the ingredients together, add scallions, taste for seasoning, adjust if needed and cook for about 3 minutes, stirring continuously. This is just to reheat rice and coat it properly with sauce.

(13) Take rice off heat and serve. This dish is best served hot. Store any leftovers in the fridge.

    This looks inviting. Nice work terry. A que pls. I was made to understand dt perboiling rice reduces the nutrient especially if its not local rice. How true’s that?

      Aisha, I have no scientific data to support or demerit that view. Thinking logically though, boiling any food ingredient, pouring away the water and washing it thereafter would naturally lead to the loss of some nutrients. How nutritious rice is is a different thing all together.
