Grilled Pineapple with Toasted Coconut and Honey-Tequila Sauce

Love Piña colada? You will love this amazing dessert. It is very juicy and decadent. It brings together tropical flavors and elevates them through the process of grilling and toasting. It uses both fresh and dried fruits in a complementary way. If you are on a diet, I’ve got great news for you: you don’t have to go without dessert any more. Cheers!

INGREDIENTS:

(1) 1 Half Inch Round Pineapple Slice

(2) 3 Tablespoon of Honey

(3) 1 Table Spoon of Melted Butter

(4) A Pinch of Salt

(5) 2 Table Spoons of Water

(6) 2 Table Spoons of Tequila

(7) Dried Apricots

(8) 1/4 Cup Sweetened Shredded or Flaked Coconut

PROCEDURE:

(1) Peal and cut pineapple into rounds.

(2) In a small bowl, mix together 1 Tablespoon of honey with melted butter and a pinch of salt to make marinade.

(3) Rub pineapple with marinade and leave in bowl for 30 minutes.

(4) Meanwhile, in a small sauce pan, combine remaining 2 tablespoons of honey, 2 tablespoons of Tequila, 2 tablespoons of water and the dried apricots and bring to boil. Simmer on low heat until the sauce reduces by about half and the apricots are plump. The alcohol in the Tequila will evaporate leaving only the flavor. Set the Honey Tequila sauce aside.

(5) In a frying pan, toast coconut for a couple of minutes until slightly brown.

(6) After 30 minutes, grill pineapple on both sides for about 2 minutes on each side.

(7) Plate. Drizzle some Honey-Tequila sauce on the plate. Place the grilled pineapple on top of the Honey-Tequila Sauce. Drizzle some more sauce over the pineapple. Spread the plump apricots and some toasted coconut flakes over pineapple and serve warm. Enjoy!
