Pineapple Coconut Loaf
I developed this recipe while trying to figure out what to do with some pineapple I had sitting on my kitchen counter. I decided to pair it with some coconut and voilà, a new recipe was developed. This is an amazing moist pineapple and coconut loaf. The toasted coconut shreds on the top of the loaf adds some crunch and nutty flavor to it. This is one loaf you will love a lot.
INGREDIENTS
(1) 1 Medium Sized Pineapple
(2) 2 Cups All Purpose Flour
(3) 1 Teaspoon Baking Powder
(4) 1/2 Teaspoon Baking Soda
(5) 1/4 Teaspoon Salt
(6) 1/2 Cup Vegetable Oil
(7) 1/2 Teaspoon Grated Nutmeg
(8) 1/2 Cup Sweetened Shredded Coconut
(9) 1 Large Egg
(10) 1/2 Cup Coconut Milk
(11) 150 Grams Granulated White Sugar (3/4 Cup)
(12) 1/2 Teaspoon Pure Vanilla Extract
(13) 2 Teaspoons Tequila (Optional)
(14) 1/4 Cup Sweetened Shredded Coconut for Topping.
PROCEDURE
For Pineapple Puree:
(1) Peel, core and cut pineapple into chunks. Place pineapple chunks in a food processor and process until a smooth puree forms. Pour puree into a small sauce pan and boil to reduce the liquid. This takes anywhere from 15 to 20 minutes. Take the pineapple puree off the heat source and add the tequila if using. Allow puree to cool down for about 15 minutes before using. You will need 1 cup of pineapple puree for this recipe.
For loaf:
(1) Preheat the oven to 350 degrees (F); 180 (C).
(2) Grease or butter an 8 by 4 inch loaf pan and line the bottom of the pan with parchment paper. Set aside.
(3) In a large bowl, mix together the flour, salt, baking powder, baking soda, shredded coconut and grated nutmeg. Mix well to blend all the dry ingredients together.
(2) In another large bowl, beat the egg to beak it up. Next, add the oil, coconut milk, vanilla extract, sugar and pineapple puree. Mix well after each addition to create a smooth batter.
(3) Pour the wet ingredients into the dry ingredients and mix to combine. Do not over mix or loaf will be tough. Pour batter into prepared loaf pan and bake in preheated oven for 45 – 55 minutes or until a toothpick inserted into the middle comes out clean.
(4) Take loaf out of oven, place on wire rack and allow to cool for about 15 minutes before taking it out of the pan.
Enjoy this loaf with your favorite cup of tea.

Wow you’re a genius. Terry can I reduce the sugar? For me 150grams sugar is too much for 2cups= 220grams flour. I would have left the sugar at 150gms but my Nan will be like “yolanda its too sweet I can’t eat”. I used a recipe from joyofbaking for cake donut it was too sweet I couldn’t finish it. And can i substitute the tequila for other preservative(alcohol) brandy. Thank you
Thanks for your message. Yes you can reduce the sugar to 1/2 cup that is 100 grams. You can also use unsweetened coconut flakes as opposed to sweetened to further reduce the sugar content. Feel free to use whatever alcohol you love or to leave it out entirely.
When do i add the sweetened shredded coconut and how do i sweeten it. thanks Terry u make it always seem so simple.
You add the coconut along with the dry ingredients. They are usually sold that way. You have sweetened and unsweetened shredded coconut.

The cake version you found is not the same as this. This is an original recipe of mine. The version you saw is a coconut cake with crushed pineapple filling. Thanks for sharing.

They can both be found in grocery stores and baking stores.

Vanilla Flavor usually comes in bottles. Pls try and use the pure vanilla essence as opposed to the imitation. Thanks
I had some pineapple at home and i tried the recipe but i must have mixed it too much cos it came out rather too think, it was almost cake-like. And the middle was not cooked all the way, even though the toothpick came out clean, that was kinda weird. I’m looking forward to trying out the new chicken dish though.
I really do not know what went wrong. If a toothpick came out clean, then the middle ought to have been cooked. Better luck next time and thanks for the feedback.

Tried this and loved every bite, it was slightly crunchy on the outside and moist inside even the next day. I used 100g of sugar and it still had the right amount of sweetness.On to the next recipe 🙂

just finishd making this and its lovely.shredded n sweetened my coconut my self.didnt know i was out of eggs so i used just one cos thats all i had left.(doubled d recipe cos i hav a full house).but it still turned out nice.
