How to Make Fondant Lace Designs on Cakes
In this tutorial, I explain my method of making fondant lace designs on cake tiers. Although an easy design to execute, it is somewhat time consuming. The beauty of this design is that it is subject to a lot of interpretations. You can choose to use various types of fondant cutters, stick the cutters very close to each other or space them and work entirely with fondant or a mixture of fondant and royal icing. I will be demonstrating the process using the String Aso Oke Cake above and the Dressed Igbo Woman Cake below.
TOOLS:
(1) Petal, Flower and Leaf Cutters
(2) Rolling Pin
(3) Fondant Extruder or Pipping Bag
(4) Paint Brush
THE PROCESS:
(1) First, drape your cake tier with fondant. You want to use different shades of fondant for the cake tier and cutouts. For instance, if the cutouts are going to be white, the cake should be draped in cream/ivory fondant.
(2) Next, roll out white fondant and cut out shapes using flower, petal and leaf cutters. You have the option of making lines and patterns on the cutouts if you want a more textured effect.
(3) Brush the body of the draped cake tier with a bit of water (I prefer alcohol like vodka) and stick the cutouts to the tier.
(4) Next, make the connectors. You can use either royal icing or fondant for this.
i) If using royal icing, you need not make traditional royal icing. Simply mix icing sugar with a bit of water to form a paste. Put the paste in a pipping bag fitted with a small round tip and pipe the lines on the cake.
ii) If using fondant, place white fondant in an extruder, make strings and stick the strings on the cake tier, connecting the cutouts. I used royal icing for the dressed igbo woman cake and fondant for the sting aso oke cake.
(5) This step is optional, but you can choose to embed the tier with sugar pearls to add more to the lace look.
