Fire in yu Wire (Jamaican Spicy Jerk Chicken)
This is a lovely chicken dish which packs a punch. It is dark and crunchy on the outside with a juicy pink interior. Of Jamaican heritage, the major ingredients used are allspice and scotch bonnet pepper. The sauce can also be used with other meats like beef and pork. Ready to reconnect with your Jamaican side? Try this easy recipe out.
INGREDIENTS:
(1) A Whole Chicken, Segmented into 8 -10 Chicken Parts (You can also use Chicken Thighs, Drumsticks or Breast)
For the Fire in yu Wire Sauce:
(1) 1/4 Cup Ground Allspice
(2) 1/4 Cup Brown Sugar
(3) 2 – 3 Scotch Bonnets (Seeded)
(4) 3 – 4 Cloves of Garlic
(5) 1 Tablespoon Thyme Leaves
(6) 1 Stalk Scallions (Spring Onions)
(7) 1/2 Teaspoon Cinnamon
(8) 1/4 Teaspoon Grated Nutmeg
(9) I Tablespoon Soy Sauce
(10) Salt and Pepper to Taste
PROCEDURE:
For Fire in yu Wire Sauce:
A quick note: Allspice is the dried unripe fruit of a type of berry which goes by other names such as Jamaica pepper, pepper, myrtle pepper, pimenta and pimento. It is usually sold whole or in the powdered form. It can be found in the spice aisle of any grocery store. If using the whole berries, crush them before using in this recipe.
(1) Place all the ingredients in a blender or mini food processor and blend till a thick dark paste forms. That’s it! The paste can be stored in the fridge for up to a month and used on a variety of dishes.
For Jerk Chicken:
(1) Wash and dry chicken thoroughly.
(2) Rub chicken with fire in yu wire sauce. Be sure to get into all the folds of the chicken. Cover chicken and place in the fridge over night or up to 8 hours.
(3) Preheat oven to 450 degrees. Grease an oven safe dish with oil and place chicken in oven and bake for 1 hour. Turn chicken once after 20 minutes and another time after 40 minutes. Bast chicken with oil from the baking dish after each turn.
(4) The chicken is ready to be served with your side of choice. Try it with some Thyme-Chicken Fried Rice (A variation of my Beef-Basil Fried Rice. Recipe here).
Leftover jerk chicken can also be made into a salad.
