Almond Milk
Almond milk is a great alternative to dairy milk, especially for individuals who are lactose intolerant. It is rich and creamy and can be used in place of dairy milk in your cereals, coffee and cooked meals. For me, there is nothing more refreshing than a cold glass of almond milk on a hot sunny day. This healthier alternative to dairy milk can be made with just one simple ingredient: raw almonds. In this recipe, I have sweetened the milk with some dates and added a bit of vanilla to flavor it.
INGREDIENTS:
(1) 1 Cup Raw Almonds
(2) Water
(3) 3-4 Pitted Dates (Optional)
(4) 1/2 Teaspoon Pure Vanilla Extract (Optional)
PROCEDURE:
(1) Place raw almonds in a container and cover with water to soak. Leave almonds in water for 8 to 24 hours. The longer you soak the almonds, the creamier the milk will be.
(2) After the soaking period, you will notice the water will have a dirty and foggy look. That’s fine. Pour away the water and rinse almonds till the water is clean. The almonds will look a bit plumped up.
(3) Place almonds in blender along with some water and blend. Blend almonds till it has reduced to pulp and the fluid is creamy. This takes about 3 minutes. The quantity of water you use here will depend on how creamy you want your milk to be. I use 2 cups of water. You can use up to 4 cups of water. If you want to sweeten the milk naturally with dates, add them at the beginning of the blending process. Milk can also be sweetened later on with honey or sugar, or can be enjoyed unsweetened.
(4) Line a sieve with cheese cloth, coffee filter or other fine fabric and pour blended almonds into it. Allow the almond milk to flow through the sieve and squeeze the cheese cloth to extract as much milk as you can.
(5) Milk can be enjoyed as is. You can also add 1/2 teaspoon of pure vanilla extract to milk to flavor it.
Store almond milk in a sealed bottle or jar in the fridge for up to 1 week. I doubt it would last that long. Enjoy!

You are welcome. The store bought ones have a lot of foreign ingredients. You are better making yours.
Terry a question please do u blend d dates with d seeds or u remove them. Dates we ve here are usually dried
I used seedless dates. If yours has seeds, do take them out prior to blending.

Dates are a type of palm fruits. You can leave it out or sweeten with sugar or honey if needed.
It last exactly 4 days in my fridge.

I really do not know where you can find it in Kano I know for certain that it is sold in Kaduna, so it should be in Kano too.
