Wedding Cake with Flowered Top Tier
There are certain cake designs you see as a cake maker and you earnestly look for an opportunity to execute them. That was the case with this cake. You can thus imagine my excitement when I knew I was going to make it, with my own twists of course. It was a success and the bride loved it so very much.
The cake itself is a 2 tier 8 on 10 inch Nigerian Cake frosted with vanilla butter cream. All the design work was done with marshmallow fondant.
The top tier of this cake is where most of the “drama” is. In executing the top tier, I used a total of 200 small fondant blooms. These were made in advance and left to dry in empty egg crates. Oh the joy of baking!
One thing you might not know about me as a cake designer is that I have a philosophy which I stubbornly hold on to. That philosophy is that except for things used to support the cake structure or fondant structures, everything on the cake must be edible. I do not use real ribbons on cakes. Neither do I use inedible decorations. The original design of this cake was made with twines tied around the middle tier. The challenge for me was how to replace those twines with fondant! After some thinking, I was able to create a knotted twine out of fondant. A tutorial on how I did this can be found here.
