How to Make Tortellini and Tortelloni
Tortellini is a ring shaped pasta which is usually stuffed with cheese, vegetables and meats. They are usually served in a broth, infused melted butter or with various types of pasta sauces. Tortelloni is also a type of stuffed pasta. It is shaped like a tortellini, but bigger. In the post below, I will be showing you how to make these two types of stuffed pasta.
INGREDIENTS:
(1) Pasta Dough (Recipe here)
(2) Stuffing of your choice (I used minced cooked chicken, ricotta cheese and Parmesan cheese here)
(3) Egg White or Water to seal.
PROCEDURE:
TORTELLINI:
(1) Roll out pasta dough into a thin sheet as shown in my post on how to make pasta dough. You have to work pretty fast so the dough does not dry out before shaping.
(2) Using a wheel cutter, cut the dough into squares with sides measuring 1.5 inches.
(3) Place a little bit of filling in the middle of the squares.
(4) Brush the edges of the squares with egg white or water.
(5) Start shaping your tortellini. First fold the square into a triangle.
(6) Next, fold the top angle of the triangle unto the body of the pasta.
(7) Next, wrap the pasta around your finger and seal both tips together to form a ring.
(8) Continue this process until you have used up all your dough.
TORTELLONI:
(1) Roll the pasta into sheets and cut them into squares with sides measuring 2.5 inches. I have used a fluted wheel cutter here.
(2) Place your stuffing in the middle of the squares, brush the sides with egg white or water and fold the square into a triangle.
(3) Fold the top angle of the triangle and bring both tips together.
STORING:
Both pastas can be used immediately. Alternatively, they can be stored in the fridge is a single layer on a tray. To freeze them, place them in a single layer on a tray and place the tray in the freezer. After they have frozen, pack them into freezer bags and keep in the freezer.
