hi terry.i need ur help.hubby n i bday is coming up in a weeks tym n i was thinking of stackin rvc german chocolate cake n lemon cake togthr n frosting.will that work? plus which do u think will b better;buttercream icing or which frosting. thanks.one last question how long will it stay at room temperature? sorry,too many questions. thanks
Hi. If you want to mix all three in a cake, then you must go with cream cheese frosting. Unless very important, I will suggest you remove the lemon cake from the equation. Cake frosted with creamcheese can last the duration of the party at room temp. That should be about 6 hrs. Do not forget to take it out of the fridge about an hour b4 you intend to serve.

Hi. Wedding cakes can be intimidating. I’d advice you keep it clean and simple. I doubt there is any ingredient that can make your cake more delicious. My advice is to always use fresh and high quality ingredients. Use butter and not margarine. Fresh eggs. All the best.
Pls what are d fresh and high quality ingredients I can use? I normally use butter, fresh eggs, sugar, browning, vanilla flavor, nutmeg, flour, baking powder, salt, soda etc.

Hi. Aside from fruitcakes, I do not know how to preserve cakes with alcohol and I use no type of preservatives for my cakes.

Hi kemi. You can use salted butter. Do not use salt wherever a recipe calls for salt.

I tried your French Vanilla cake I was simply divine . Can this recipe be made into a chocolate cake ? How much cocoa would I need to substitute ? If not which of you chocolate cakes would be the best to use .

Glad to hear. I have never tried it as a chocolate cake before; but it is worth exploring. I thus cannot give any definite answer about quantities of cocoa powder. My fall back recipe for chocolate cakes is usually the Chocolate Butter Cake.

You can use my French Vanilla Sponge Cake and fill it with pastry cream.

I also had to use self raising cake flour and halfed my bp. Thanks a lot from zimbabwe. oh the ither chocolate cake with oil was a disaster and way too oily and sunken to paper thin kkkkk.

As you love baking, I wonder if you have experienced making a cake with cracker crumbs instead of flour?
Many years ago, about 50 (LOL) I had relatives who came to our home from Atlantic City, NJ, for Thanksgiving each year and brought the most interesting, sinfully delicious cake.
It was a spice cake that was very light, similar to a sponge cake. It had whipped cream for icing and shaved bitter chocolate on it. At that time, the closest recipe I could find for it was a German cake made with finely crushed crackers.
A reason it was so good, was that after a big meal, not only was it light, but it was not real sweet, including the whipped cream. All these years later, I have never forgotten it.
